The initial release in our Songbird Gin Series will be the Goldfinch, named after it’s hue of light gold. This is the house gin that rested in Sauternes Wine barrels, transforming the flavor into a sophisticated liquid that gin lovers will thoroughly enjoy.

Inspired by the classic London Dry Gins, we chose nine botanicals grown around the world to come together through the alchemy of distillation to create this dry gin. Handmade in extremely small batches, our Songbird Gin is flavorful, balanced, and layered.

Our Mockingbird Old Tom Style Gin came out of the still juniper forward and spent some time resting in a mead barrel. After aging, the spirit was infused with a touch of honey. The result is a golden and bright gin with a deep, floral nose that finishes with just a kiss of sweetness.
